Immune boosting Broccoli Pesto

Roasted broccoli pesto is a flavorful and versatile sauce that can be used on pasta, as a sandwich spread, or as a dip. Here's a my recipe for making roasted broccoli pesto that even a toddler approves. You will never look at the broccoli the same way again. This is a bulk freeze recipe so scale down if you wanting to make a smaller batch.

Ingredients:


- 2kg broccoli

- large bunch of coriander

- bunch of parsley

- 200g of macadamia nuts (or any other nut of your choice)

- 1/2 cup of flux seed

- 1 lime

- 3 cloves garlic, minced

- 200ml extra-virgin olive oil

- Salt and black pepper to taste


1. Roast the Broccoli

- Preheat your oven to 400°F (200°C).

- Toss the broccoli florets with a bit of olive oil, salt, and pepper on a baking sheet.

- Roast in the preheated oven for about 15-20 minutes, or until the broccoli is tender and slightly browned. Let it cool slightly.


2. Blend Ingredients

- In a food processor, combine the roasted broccoli, nuts, minced garlic and all the herbs

- Pulse until the ingredients are roughly chopped, i like my pesto chunky but it is up to you, you can always make it smooth.


3. Add Olive Oil

- While the food processor is running, slowly add in the extra-virgin olive oil. Continue blending until the mixture reaches your desired consistency. You will find it will struggle to blend at first but as more oil you add on , it will make your job easier.


4. Season

- Taste the pesto and add salt and black pepper to your liking and don't forget to add on the juice of one lime at the end.


And thats as simple as that! Your roasted broccoli pesto is ready to use! You can serve it over cooked pasta, spread it on sandwiches, use it as a dip, or get creative with how you enjoy this delicious sauce.

If you have extra pesto, store it in an airtight container in the refrigerator. Drizzle a bit of olive oil on top to prevent browning. It should last for several days, or alternatively put it in a food bag, squeeze the air out and put it in the freezer, it will easily store for 6 moth or more without any impact on texture or flavour
