Blackcurrant Oat Flapjack Recipe


It's now July, and my lovely blackcurrant bush is brimming with berries. After making a few jars of blackcurrant jelly, we are now moving on to this lovely recipe. This mouthwatering recipe combines the natural sweetness of blackcurrants with the comforting goodness of oats, resulting in a delightful and satisfying snack that even the fussiest toddler would love.


When it comes to flapjacks, nothing beats the combination of chewy oats, buttery goodness, and a burst of tangy fruit. The aroma that fills your kitchen as these delectable treats bake in the oven is enough to make anyone's mouth water. So, let's gather our ingredients and get started on creating these irresistible Blackcurrant Flapjacks.


Ingredients:


- 150g of blackcurrants

- 200g of rolled oats

- 100g of all-purpose flour

- 200g of unsalted butter, melted

- 200g of sugar

- 2tb spoons of honey or maple syrup

- 1 teaspoon of baking powder

- A pinch of salt


Instructions:

Now, let's dive into the step-by-step process of creating these delightful Blackcurrant Oat Flapjacks:


1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper. This will prevent the flapjacks from sticking and make for easy removal later.


2. In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, 1 teaspoon of baking powder, and a pinch of salt. Mix them together, allowing the dry ingredients to blend together.


3. Pour in the melted unsalted butter and honey (or maple syrup) into the dry mixture. Stir well until the ingredients are thoroughly combined, creating a sticky and luscious flapjack mixture.

Thankyou for this recipe, I have 1 blackcurrant bush and have picked 3kg of fruit so far. There's still plenty left to turn black. I have made pies and cheesecakes, will add flapjacks to my list. I am going to be making some jam too.
